I considered including this in my From the Recipe Box series, but since it is more of an assemblage of ingredients than an actual recipe, I decided against it. But since it is so good, I couldn’t resist sharing it with you!
I didn’t like cottage cheese until about a year ago. The texture just grossed me out. Even now that I do like it, I find that I much prefer it paired with sweeter items. While I know a lot of people love cottage cheese with tomatoes, or just sprinkled with a bit of salt and pepper, I’d much rather take mine with sliced peaches or a dollop of apricot jam.
Out of peaches and looking for a way to use up our almost overripe bananas, I came up with this:
I just sliced up a banana, and tossed it with a bit of honey and cinnamon. I topped that with cottage cheese, and finished everything off with a bit more cinnamon sprinkled on top.
I wasn’t sure how it would turn out, but YUM, it is good!

My husband puts cottage cheese in his lettuce salad sometimes. I HATE cottage cheese. I will eat it in things – like lasagna – but I would starve before I ate it plain.

Peanut butter and bananas taste great together and even better with cottage cheese.
